Buffalo Chicken Arancini
Okay you guys voted so here it is! An allstar appetizer for the Super Bowl, BUFFALO CHICKEN ARANCINI! They take a little bit of time to get all together but they are so worth it. So crispy and delicious you won’t be able to stop eating them.
Recipe
Yield: 23 LARGE balls (Can adjust the size to make more if needed)
3 Cloves garlic, chopped
½ Onion, chopped
1 ½ cup Arborio rice
1 cup White wine
2 tbs Butter
4.5ish cups of Chicken stock
2 Chicken breast, shredded ( I used a rotisserie chicken to keep it easy)
1 pk Hidden Valley Ranch Dip seasoning
Hot sauce of your choice to your taste
2 handfuls of shredded cheddar
To bread
2 eggs + ½ cup water
Flour as needed
Bread Panko crumb as needed
Canola oil to fry
Ranch or Blue Cheese for dipping
Procedure
These take a few steps so hang in there!
- Start by making risotto, it doesn't have to be perfect since we are going to fry them up anyway.
-Saute onion and garlic until translucent. Add 2 tbsp of butter, allow to melt.
- Add in rice and toast, about 1-2 minutes then add wine. Cook until wine is absorbed.
- Add Chicken stock in 3 - 4 stages pouring in 1.5 cups at a time. Start with the first 1.5 cup of stock and stir frequently on a medium simmer. Allow rice to absorb stock before adding the next 1.5 cups. Continue this process until rice is al dente.
-Once rice is cooked, mix in shredded chicken, ranch packet, and as much hot sauce as you like. I used Hanks “Cilanktro”, Franks Red Hot, Sriracha, and Tabasco of course.
-Spread risotto onto a sheet tray to cool quickly.
-Once Completely cooled, mix in two handfuls of shredded cheddar then start to form into balls.
- Set up a breading station with flour, egg wash, and panko bread crumbs. Dip each ball into flour then egg then bread crumb. Repeat until all of the arancinis are fully breaded.
**At this point you can lay the arancinis on a sheet tray and freeze, then place in a zip lock bag to fry later**
-In a cast iron pan or dutch oven add a good amount of oil and heat until about 300 degrees.
-Carefully place arancini in hot oil and fry on all sides until golden brown.
-IF you’re frying from fresh, not frozen, they should be ready to go in about 5 minutes. Time may vary if frying from frozen. You may have to place in the oven for a few minutes after frying to ensure they are heated all the way through. Drizzle or dip in to ranch or blue cheese and enjoy!
