Shrimp Roll

Lobster rolls are one of my favorite indulgent sandwiches. My perfect bite would be devouring one with a glass of bubbly on a beach somewhere. Okay back to reality!

Unfortunately lobster is a luxury, and with a growing family we can’t always justify lobster for an everyday dinner. However these amazing frozen shrimp from Trader Joe’s really are a great substitute to get to that almost perfect bite. I find myself cutting my normal lobster rolls with a little shrimp to stretch it if I need to, but I figured why not try it with all shrimp. Certainly cuts down the cost and with already having the frozen bag of shrimp in the freezer, the convenience of it was hard to pass up. Now you do not HAVE to use this shrimp specifically but I find that it does have a lobster like texture and taste and for only $10/bag for me it’s a no brainier. 

So sit back and relax on that imaginary beach on a beautiful night and treat yourself to this super simple delicious shrimp roll!


Recipe 

Yield: 4 Shrimp Rolls

1 bg TJ Argentinian Frozen Shrimp (1 lb of whatever shrimp or lobster you have)
3 Stalks of Celery, Small Diced
¼ Red Onion, Small Diced
Zest & Juice of 1 Lemon + an additional lemon to flavor
poaching water
¼ Cup Mayo 
1 tbs Fresh Parsley, Chopped (also great with dill, chives, scallions. Use what you have)
Salt and Pepper to taste ( I like to use a lot of fresh cracked black pepper in this) 
4 Split top potato rolls
Butter for toasting
Romaine lettuce or Bibb lettuce 



Procedure


Bring a pot of water with lemon juice to a boil, add shrimp and poach about 5 minutes, depending what product you’re using. Since I used frozen shrimp it sometimes takes a little long due to the temperature of the water changing from the shrimp being frozen. Once cooked remove shrimp and submerge into an ice bath to stop the shrimp from cooking.

Combined the remainder of the ingredients and mix to incorporate. Once shrimp is cooled cut into smaller bite size pieces. If serving immediately continue and add shrimp into the rest of your mixture. If making ahead, keep shrimp separate from other ingredients since the lemon juice can continue the cooking process of the shrimp which can lead to an unpleasant texture. 

Toast each side of your potato rolls. Assemble rolls with lettuce and a few scoops of salad and serve!
